The Quality - The applied Technology

Dolciaria Val D'Enza S.p.A. was born on 1977 as a family-run laboratory for the production of fresh tarts, today it manufactures "Crostate" and "Crostatine" made of short pastry (standards, Sugar Free and also lately Gluten Free), "Torte" e "Tortine" of fluid dough and Torta Pan di Spagna using exclusively first quality raw materials. Our suppliers are carefully selected by our Quality Control, for detailed analyses we use credited external laboratories, following a detailed sampling procedure. The Quality System, of which our Factory is equipped, grants the highest respect of hygienic conditions.
The Factory is certified with:

The Factory is equipped with technological advanced implants system able to ensure high quality standards for the consumer. The building is also designed so as to allow a one-way flow of production and a separation among the different departments so as to avoid any contamination.

MIX DEPARTMENT
Mixes are prepared in controlled temperature and humidity special compartments and realized by a highly automated system, in which a PLC software manages the entire preparation cycle, starting from ingredients weighing throughout their charge direct into buckets till their mixing.

MOULDING DEPARTMENT
During the moulding phase, which run in a completed automated system, both short pastry and fluid dough are shaped in specific moulds, on which different toppings are subsequently stuffed (added)

BAKING DEPARTMENT
The baking take place in tunnelled continuous-ovens supported by a PLC software which allow the electronic control of baking parameters in all different sections of the oven. After baking, the product is taken into the cooling tunnel at controlled humidity and temperature.

PACKAGING DEPARTMENT
The product is taken to the packaging machines by different belt conveyors. Those packaging lines are equipped with an artificial vision system with cameras able to assess the product appearance, secondly to recognise those products non conforming the pre-set quality specifications and finally to eject them from the line before packaging. This control system has been designed on purpose for Dolciaria Val d'Enza and it enables to assure, instead of the traditional human inspection, reliability, security and constancy of control. Products also undergo a control by metal detector and a weight check before they are packed in trays or in cases.
